Cindy Lou’s steak it rub online store and awesome BBQ rubs and seasonings: Pig Candy Directions: Mix brown sugar, cayenne and Cindy Lou’s Oink It in a bowl. Lay bacon slices out flat. Sprinkle with mixed ingredients and pat gently (coating one side only) Use indirect heat and a drip pan (important to prevent flare-ups and catch the grease). Heat grill 300°F; Cook coated bacon until just before crispy as it will continue to cook. This should take about 30 minutes to 1 hour. Watch closely…it will not taste good if burnt! J Let cool and enjoy! *Note: Hot sugar will burn you…remove with tongs…cool on wire rack (do not use paper towels as the bacon will stick).
Grilling a Tri-Tip is pretty simple. The one thing you really have to worry about is flare-ups. Tri-Tips have a wonderful layer of fat (remember – fat is flavor!) that can melt off of the steak and onto your coals causing flare-ups, which will ultimately burn your steak. The rest is easy. Prepare your grill for hot direct heat on one side, and indirect heat on the other using split diverter plate. Sear the roast on all sides, 3-4 minutes per side over direct heat. Carefully watch the roast during this process as one side of the roast is typically quite fatty and as the fat heats up it can drip down and cause flare-ups. Keep moving the tri-tip away from the flame if flare-ups occur. Once the tri-tip is seared on all sides, move it away from direct heat and place it fat-side up on the grill rack over the diverter plate. Try to maintain a grill temperature of 250°F to 300°F.

Grilled Lemon Chicken with Roasted Vegetables Over Croutons Directions: Take the giblets out of the chicken and wash it inside and out. Remove any excess fat and leftover pinfeathers. Toss the onions, potatoes and carrots with a little olive oil in a small roasting pan. Place the chicken on top and sprinkle the inside of the cavity with salt and pepper, or your favorite dry rub. Place the lemons inside the chicken. Pat the outside of the chicken dry with paper towels, brush it with the melted butter, and sprinkle with salt and pepper. Tie the legs together with kitchen string and tuck the wing tips under the body of the chicken. Roast for 1 ¼ to 1 ½ hours, or until the juices run clear when you cut between the leg and the thigh. Cover with foil and sit at room temperature for 15 minutes. (The vegetables may burn, but the flavor is good.)
